From the Dehesa to our Curing Cellars<\/strong><\/h2>\n

After aging, we continue with the different production phases (cutting, salting, drying…) in our natural cellars, where temperature and humidity play a fundamental role. The daily monitoring of the pieces by our master ham makers is essential throughout the process. Once cured, the selection of the product is carried out and those pieces that are going to be used for consumption are chosen.<\/p>\n
