The labeling

Each piece of Señorío de Los Pedroches has seals of different colors depending on the breed of the Iberian pig and its diet.

Señorío de los Pedroches markets two brands: Señorío de los Pedroches, a brand attached to the Regulatory Council of the Protected Designation of Origin of Los Pedroches and Ibéricos de Señorío, complying in the same way with the quality and labeling characteristics of Iberian products regulated in the Royal Decree 4/2014, of January 10.

There are four types of seals for labeling hams and shoulders:

BLACK – ACORN-FED 100% IBERIAN HAN AND SHOULDER

It identifies the Acorn-fed 100% Iberian Ham. During the “Montanera” months (October to March), the pigs in their fattening stage are fed on acorns and grass in the pasture.

RED – ACORN-FED IBERIAN HAM AND SHOULDER

It identifies the Acorn-fed Iberian Ham. From pigs with 75% or 50% of the Iberian breed that are fed during the “Montanera” months with acorns and grass in the pasture.

GREEN – FREE-RANGE-FED IBERIAN HAM AND SHOULDER

It identifies the Free-range-fed Iberian Ham. Coming from pigs with 100%, 75% or 50% Iberian breed, fattened in the field based on grass and natural feed.

WHITE – CEBO-FED IBERIAN HAM AND SHOULDER

It identifies the Cebo-fed Iberian Ham. Coming from pigs with 100%, 75% or 50% Iberian breed, fed with natural feed and raised in feeding areas.
